This one is one my favorite all time recipes. I "borrowed" it from Past Missouri Honey Queen Erin Mullins and it has been a fan favorite at family gatherings and pot lucks.
1 cup of butter
1 cup of Sunny Day Honey
2 eggs
1 tsp vanilla
2 cups flour
1 cup quick cook oats
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
Optional- 1/2 cup chopped pecans
Cream honey and butter until smooth. Beat in eggs one at a time. Add vanilla and beat. In a separate bowl, combine flour, oats, baking powder, baking soda, and salt. Mix well. Add dry ingredients to honey mixture; mix. Stir in chocolate chips and pecans. Drop by big tablespoon on a non-greased baking sheet. Bake 12-16 min at 350 degrees. Let stand 1 minute, then remove to wire rack to cool.
