Day 5: Waldorf Chicken Salad

Makes 6 servings

1/4 Cup Sunny Day Honey

2 Tablespoons dijon-style mustard

1 Tablespoon poppy seeds

1/3 Cup lemon juice

1/2 Teaspoon grated lemon peel

1/2 Cup vegetable oil

2 Apples, cored and diced

1 Cup diced celery

1/3 Cup toasted sliced or diced almonds

1/4 Cup minced green onion

12 dried apricots or grape halves

Stir together honey mustard, poppy seeds, lemon juice, lemon peel, and oil in a large bowl. Add apricots or grapes and let stand for 30 minutes. Add chicken and toss lightly. Refrigerate until ready to serve. To serve add apples, celery, almonds and green onion; toss to coat.
